"Santa! Santa here? I know him! Santa's coming! Santa's coming!" Is it possible to watch Elf too much? I think not.
But really, this is when I want to freeze time, bottle up the magic and just camp out. Waiting out the Christmas joy, because it comes and goes in a flash.
So we've been capturing magic this month. And last week we turned an ordinary December night into something special with Home Alone and a batch of peppermint popcorn.
Here's how to make this a reality at your house.
Pop popcorn. (We use the air popper so all of these
popped popcorn.)
Melt about half a bag of white chocolate chips, with a spoonful of coconut oil added. The oil just makes the melted white chocolate more pourable. You can probably use oil, or butter.
Add peppermint extract to the melted white chocolate. As much or as little as you want. We started with about a teaspoon and then added a bit more.
Salt the popcorn.
Sprinkle crushed candy corns over the popcorn. Don't have those on hand? Just pulverize them in a food processor. The extras are great to sprinkle on your hot chocolate, your ice cream, cookies, your morning oatmeal. Whatever. You get the idea.
Then toss with the melted white chocolate. Lay it all out on a piece of foil to set up and cool.
And then wait. I know it, it's hard. But worth it.
Then devour and repeat.
Now go make some. You're welcome.

no, it's not possible to watch Elf too much. funniest ever. and this recipe sounds splendid! may have to make some for our movie party next week where I think we are, in fact, watching Elf on our garage door :)
ReplyDeleteThis sounds amazing, but do you have a suggestion as to how to avoid dairy (in the white chocolate chips) and to make this recipe?

ReplyDeletethis looks crazy delicious... but here's what you don't know about me- i'm a popcorn addict! no joke. it's serious. there is no way the warm popcorn would make it past step one.
